We made carrot, raisin and cinnamon pancakes and blueberry but you could add any ingredients you like!
Basic ingredients
1 cup/120g self raising flour
1 cup/240ml milk (cow’s, formula, breastmilk)
1 egg
- Measure flour
- Add egg and mix
- Add milk and mix. Pancake mix is complete – now you can add optional ingredients (I divided the mixture in half)
- Option 1: Grated carrot (small handful, tbsp raisins, 1/2 tsp cinnamon)
- Option 2: Blueberry – small handful and 1/2 tsp vanilla
- Mix
- Put butter to melt in pan (depends on size – maybe 1 tbsp)
- Pour approximately 1 tbsp mixture in pan
- Cook for 2-3 minutes each side depending on your hob. Check pancake looks brown
- Serve!
